A Figgin’ Good Salad

I have to admit that this is not my recipe, it is one of Coach Chris’ but it looked so tasty when she send it to me through text that I had to share with all of you. Chris mentioned that she got the figs from her neighbors garden and the tomatoes from her own garden. Sometimes salads can be challenging in meal prep being that they often do no hold up well over time. However, this salad holds up great! Chris makes a big batch and it will last for a few days. A Figgin' Good Salad

Ingredients
- 2-3 cups kale
- 1 tsp olive oil
- 1/4 cup shredded carrots
- 1/4 cup shreeded red cabbage
- 2-3 each figs
- 1/2 each tomatoes chopped
- 1 oz feta crumbled
- 4-5 ounces pork precooked
- 1 tablespoon balsamic dressing
Instructions
- Start by massaging the olive oil into the kale.
- Once kale is dressed and placed in a bowl, add in the remaining ingredients and toss to combine.
- Enjoy!
