A Fueling Pizza

As a dietitian, food is apart of everything I do. I truly enjoy food and showing people how it can be used to fuel the body. Take pizza for example, it often gets a bad reputation but if prepared following our Fueling Edge System it can create a well balanced dish.

A Fueling Pizza

Ingredients
For the Chickpeas
- 15 ounces Chickpeas rinsed and drained
- Salt and pepper to taste
For the Fried Eggs
- 3 each eggs
- 1 tbsp olive oil
- Salt and pepper to taste
For the Pizza
- 1 each whole wheat pizza crust
- 1/3 cup pizza sauce
- 1/4 cup mozarella cheese
- 1/4 cup roasted chickpeas
- 1 cup mixed greens
- 3 each fried eggs
- Sriracha to taste
- 1 tsp ranch dressing
Instructions
For the chickpeas
- Preheat oven to 400 degrees F. While oven is preheating, lay chickpeas out on a towel to air dry.
- Once oven is preheated, toss chickpeas in salt & pepper to taste and place on a baking sheet.
- Roast chickpeas for 20 minutes or until crunchy. Remove from oven and set aside.
For the pizza.
- Preheat oven to 350 degrees F. While oven is preheating, assemble pizza by spreading sauce and cheese on crust.
- Once oven is preheated, bake pizza until crust is crisp and cheese has melted, about 10 minutes.
- While pizza is baking, place a skillet on the stove on medium heat to cook the eggs.
- Once skillet is heated, drizzle olive oil to coat the pan. Once oil has been heated, add eggs , season with salt and pepper and cook to preference (i.e. sunny side up, hard fried, etc.)
- When pizza is done cooking, remove from the oven and top with chickpeas, mixed greens and fried eggs.
- Drizzle with sriracha and ranch and enjoy.
