Black Bean Burger with Spicy Cabbage Slaw

I love having vegetarian “burger” options but a lot of commercially prepared patties are full of added fillers so I set out to create a black bean burger at home that did not require a lot of effort. So here it is, enjoy!
Black Bean Burger with Spicy Cabbage Slaw

Ingredients
For the burger
- 2 cans Black beans rinsed and drained
- 1/2 each Yellow onion diced
- 1/2 cup Breadcrumbs
- 1 each egg
- pinch garlic powder
- 1/8 tsp salt
- 1/8 tsp black pepper
- 2 tbsp Butter or oil of choice
- 1/2 each Avocado
For the Slaw
- 2 tbsp lime juice
- 1 tbsp Sriracha
- pinch sugar
- 1 cup Shredded red and green cabbage with carrots
Instructions
- Drain and rinse the black beans and place in a mixing bowl.
- Mash beans to desired consistency. I did not mash mine completely because I like more texture to my burger.
- Once beans are mashed, add in yellow onion, breadcrumbs, egg, garlic powder, salt and pepper. Stir to combine.
- Once combined, portion patties to desired size, I made 4 large burgers but you could make smaller ones or even bite size appetizers).
- Once portioned, heat a skillet on medium heat and add butter once hot.
- Place each patty in the skillet and cook until golden brown on each side and heated through. I used butter because it created the golden, crisp texture that I like but you could use any oil of your choosing.
- While patties are cooking, in another mixing bowl combine lime juice, sugar and Sriracha. Once mixed, add in cabbage and stir to coat evenly.
- After patties are done cooking, remove from the stove and tip with sliced avocado and spicy cabbage slaw.
