Decadent Chocolate Mousse

Valentine’s Day is right around the corner. So, we’re all thinking about chocolate. Right? Well, here are a few interesting facts about chocolate followed by a recipe for deliciously decadent chocolate mousse.
- Chocolate is fabulously tasty!
- Health benefits – Health benefits have been associated with dark chocolate, particularly dark chocolate containing more than 70% cocoa. Research suggests that dark chocolate may have a beneficial effect on blood pressure, lipids and inflammation. Also, cocoa may be associated with improvements in cardiovascular health and mental fatigue.
- The world’s largest chocolate bar weighed 5792 kg (12,770 lbs).
- Caffeine – According to Consumer Lab, most popular dark chocolates contain 40-50mg of caffeine per listed serving size.
- In 2013, Belgium issue a limited edition of chocolate flavored stamps.
- Cocoa vs cacao – Cacao is cold pressed raw cocoa beans. Cocoa is cocoa beans that have been roasted at high temperatures.
- White chocolate – not technically chocolate as it contains no cocoa.
- Nutella was invented during WWII, when an Italian pastry maker mixed hazelnuts into chocolate to extend his cocoa supply.
- Chocolate is fabulously tasty!
Decadent Chocolate Mousse
Servings 4 small ramekins

Ingredients
- 2 avocados ripe, peeled, pitted
- 1/4 cup cocoa powder Ghirardelli, or your favorite
- 5 tbsp unsweetened coconut milk Silk
- 1/4 cup raw honey
- 1/8 tsp salt
- 1.5 tsp vanilla extract
- 1/4 cup semisweet chocolate chips or chopped dark chocolate
Instructions
- Combine first 3 ingredients in food processor and blend till smooth and creamy, scraping sides as needed to ensure smooth consistency. Add remaining ingredients EXCEPT chocolate chips. Blend till smooth.
- Pour chocolate chips into microwave safe bowl, add 1 tsp. coconut milk. Microwave in 20 second increments, stirring in-between, until chocolate is melted. Pour into avocado mixture and blend to integrate.
- Pour into 2 large ramekins, or 4 small ramekins. Refrigerate 4 hours for best, thickest, decadent consistency.
