Gluten-Free Awesome Waffles

Who doesn’t love waffles on a Sunday morning? They’re fun to make, fun to eat and not exactly the healthiest thing on the planet. I’ve tried tons of recipes over the years including everything from flax seed, coconut oil, whole wheat flour, sweet potatoes, applesauce and more. But nothing can touch the “real thing,” that is, the ones with tons of butter and white flour. Until now.
Behold…the most awesome gluten-free (junk-free) waffles, inspired by Bravo for Paleo gluten-free recipe (thank you!).
Are you drooling yet? I thought so.
Oh…and did I mention there are four ingredients? Check it out: almond flour (which you can buy online or at your local grocery store in the baking aisle), maple syrup (we get ours at BJs), coconut milk (which we get at Trader Joe’s), and eggs. Now, if we’re getting technical, you’ll add salt too and need to use something to grease your waffle iron, like coconut oil (if you want/need to stay diary-free) or butter (try to use a good quality grass-fed one).
Separate the egg yolks from the egg whites using your hand, the shell of the egg, or this adorable little egg yolk separator. Put the egg whites in a separate, clean bowl. In another bowl, I mixed the maple syrup, coconut milk, egg yolks, and almond flour together in a bowl.
Whip the egg whites in a clean bowl using a stand mixer or hand mixer (or get a nice workout with your arm) until they form stiff peaks (they will stand up on your beater), and watch in delight like my daughter is here in her Sunday jammies.
Gently fold the egg whites into the rest of your batter. If you want to get really crazy, feel free to add in spices or extracts of your choice like cinnamon or vanilla. They’re plenty tasty as they are, so trust me here.
Pour the batter into your waffle maker, cook to the desired doneness, top as desired and enjoy. I used a large belgian waffle maker, and this recipe makes about six full sized waffles, which can easily serve 12 people. Or, you can keep these for a couple days in the fridge or freeze them once they’ve cooled. Let me know what you think!

- 1/2 cup coconut milk canned
- coconut oil or butter, for greasing the waffle iron
