Slow Cooker Taco Chicken
Chef John shares his simple weeknight recipe for slow cooker taco chicken on our monthly Find Your Edge podcast series called Athletes in the Kitchen on our episode How to Cook Chicken. This is one of his favorites for his kids too.
Basically, add chicken to the slow cooker with jarred salsa, then allow it too cook, then shred it with a fork and top it on tacos, nachos, or salads. This is a super convenient, healthy recipe that can feed a family or just yourself for the week.
Slow Cooker Weeknight Easy Taco Chicken

Ingredients
- 2 chicken breast boneless, skinless
- 1/2 cup chunky salsa
- 1/2 cup taco sauce
- 1 cup water
- salt as desired
- pepper as desired
Instructions
- Season chicken with salt an pepper. Combine all ingredients in slow cooker and set on high for 4 hours. After 4 hours shred chicken with 2 forks in slow cooker pot. Shake off liquid while placing meat into tacos. Try it in quesadillas, bell pepper nachos, or on a salad. This is easily frozen too (just be sure you cool it first).
