Zucchini Bread Overnight Oats

It’s summertime, which likely means that you have zucchini growing out of your ears. And if that’s the case, you’ve likely exhausted every possibility for cooking it. There’s spiralizing it for zoodles, grilling it, sauteing it or making it into zucchini bread. And while I love zucchini bread, it’s often loaded with sugar. So how could I have my zucchini bread and eat it too? Add it to my oatmeal, of course!
Overnight oats (inspired by muesli) are one of the best time savers for a healthy breakfast. Put everything in a jar like you see here, put it in the fridge, then eat it straight out of the jar in the morning. You can eat it cold (my preferred way), but it’s also excellent if you warm it in the microwave for about 1 minute. Either way, it hits the spot!
For the ingredients, you’ve got your choice of milk (I used whole diary milk), oats (I used gluten free rolled oats), shredded zucchini, raisins, cinnamon, and this sunflower butter I was given as a gift:
I was excited to see it’s a local company out of Durham. It has vanilla, spices and some coconut palm sugar, so it was perfect for this recipe. But if you don’t have sunflower butter, you can easily substitute almond butter, pecan butter or peanut butter. And once you taste it, you can add more sweetener, if desired.

You can easily add protein powder or even mix in some egg whites (then you’ll have to reheat it). This hits the spot as a pre or post-workout meal with a healthy balance of protein, carbs and fat.

Zucchini Bread Overnight Oats
Ingredients
- 2 T sunflower butter or nut butter of choice
- 1/2 cup milk of your choice (whole diary, in this case)
- 1/2 scoop protein powder optional
- 1/4 tsp vanilla extract
- 1 tsp cinnamon
- pinch salt
- 1/4 cup rolled oats
- 1/4 cup zucchini shredded
- 1 T raisins
Instructions
- Stir nut or seed butter with milk, protein powder (if using). vanilla, cinnamon and salt in a mason jar or bowl. Add the oats, zucchini, and raisins ensuring they are all immersed in the liquid. Cover and place in the fridge overnight or for up to 3 days. Add sweetener if desired. Consume cold or reheat and enjoy warm.
